For the soup, add tomatoes to a food processor and process until chunky but not pureed. You want the tomatoes to still have some texture like crushed tomatoes. Transfer tomatoes to a large mixing bowl and stir in the remaining soup ingredients. Set aside on the counter for one hour to allow the vegetables to soften. You can also warm this soup before serving. For the sour crème, add all ingredients to a high-speed blender and blend until smooth and creamy, scraping down the sides occasionally if needed. If it’s a bit too thick, add just enough water to continue blending until thick and creamy and it turns over in the blender. For optimal results, chill at least 30 minutes before using. To assemble, serve Fresh Vegetable Soup in bowls, garnish with So Easy Sour Crème and enjoy! Soup and sour crème can be stored separately in the refrigerator up to 3 days.
