Fresh Vegetable Soup w/ So Easy Sour Crème – Raw Soup Gluten Free



This is a delicious South of the Border inspired raw soup with creamy non-dairy raw sour cream. Raw vegetable soups are easy to digest, taste incredible and contain many vital nutrients. This wonderful soup includes several vegetables such as onion, garlic, tomato and zucchini that are loaded with phytochemicals, vitamins, antioxidants and carotenoids, and herbs such as parsley and cilantro, which are high in Vitamin K and flavonoids; essential for strong bones and healthy blood clotting. Vitamin K has been shown to be particularly helpful in alleviating varicose veins and broken capillaries. All of these nutrients are essential to your well-being and can help prevent and treat disease. I also added a few spices like cumin and coriander to make this soup a incredible feast for your palate and for your body. Getting your 5 servings a day has never been this easy or this delicious!  


The sour crème recipe produces a thick and creamy dairy-free dressing. Sour crème adds extra zest to most any savory dish and can be used in sweet recipes as well. This recipe can be cut in half if desired. A high-speed blender is recommended. You can soak the nuts beforehand, however the sour crème won’t be quite as creamy and rich. The sour crème is totally optional as the soup is delicious on its own or you can use dairy sour cream. Either way, I hope you enjoy it as much as we do. Tomatoes are rich in vitamins A, C, E, and potassium. A primary nutrient — lycopene — has been linked to many benefits, including reduced risk of some cancers.

There are approximately 7500 different varieties of tomatoes in the world. Really. You can usually encounter a number of varieties just at your local farmer’s market and stores. Although they are all tomatoes, the taste does vary and It’s fun to sample this delicious fruit (or vegetable, depending on how you classify it.) To add variety to the soup, add two or three different types of tomato.

Fresh Vegetable Soup w/ So Easy Sour Crème

  • 1 1/2 cups of warm water
  • 3/4 cup diced or cubed fresh zucchini
  • 3/4 cup diced or cubed yellow squash
  • 3-4 tomatoes cut in half
  • 1/2 cup corn kernels
  • 1/4 cup minced parsley
  • 1/4 cup minced cilantro
  • 2 Tbsp minced onion or ¼ cup chopped scallions
  • 1 garlic clove, minced
  • 1/4 tsp ground cumin
  • 1/4 tsp ground coriander
  • 2 Tbsp cold-pressed extra virgin olive oil (optional)
  • 1 tsp sea salt
  • 1/4 tsp chipotle powder (optional)
So Easy Sour Crème:
  • 2 cups raw cashews
  • 1 cup water
  • 3 Tbsp fresh lemon juice
  • 1 1/2 tsp apple cider vinegar
  • 1/2 tsp sea salt

For the soup, add tomatoes to a food processor and process until chunky but not pureed. You want the tomatoes to still have some texture like crushed tomatoes. Transfer tomatoes to a large mixing bowl and stir in the remaining soup ingredients. Set aside on the counter for one hour to allow the vegetables to soften. You can also warm this soup before serving. For the sour crème, add all ingredients to a high-speed blender and blend until smooth and creamy, scraping down the sides occasionally if needed. If it’s a bit too thick, add just enough water to continue blending until thick and creamy and it turns over in the blender. For optimal results, chill at least 30 minutes before using. To assemble, serve Fresh Vegetable Soup in bowls, garnish with So Easy Sour Crème and enjoy! Soup and sour crème can be stored separately in the refrigerator up to 3 days. The sour crème will thicken when refrigerated. Yields about 4 cups Fresh Vegetable Soup and 2 cups So Easy Sour Crème.
